This burger is flavored with cumin, garlic, and parsley. It's delicious and healthy. It's perfect if you're trying to cut back on meat but not willing to give up the burger experience!
Burger Patties
- Olive oil or cooking spray
- 3 tbsp red onion, diced
- 4 tbsp black olives, diced
- 4 tbsp yellow bell pepper, diced
- 3 tbsp carrots, grated
- 1 15-oz can red beans, drained
- 2 tbsp breadcrumbs
- 1 tbsp fresh parsley leaves, chopped
- 1tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- salt and black pepper to taste
Serving Suggestions
Serve on a piece of pita with tomatos, lettuce, and cucumbers. Use your favorite condiments, but if you would like to have a full Mediterranean experience serve this burger with a home-made or store-bought Tahini sauce! It's yummy.
Process
1. Saute the red onions, black olives, carrots, and bell peppers until they are translucent. Place in a medium bowl and cool.
2. Use a potato masher to mash the red beans. Transfer the bean mixture to the bowl with the sauteed veggies. Mix well. Add breadcrumbs, parsley, oregano, paprika, cumin, salt and pepper and again mix everything well.
3. Heat the olive oil in a frying pan. With your hands form veggie patties (about 6 patties for this recipe, depending on the diameter of your patties). Cook on both sides about 3-4 minutes per side.
