Delicious salad with a Thai twist. The combination of mango, pear, red peppers and cilantro may sound a bit unusual, but they go together perfectly.
Ingredients
- 2 cups cooked shrimp, thawed, deveined, tail off
- 1 1/2 tbsp soy sauce
- 1 1/2 tsp sesame oil
- 1 tsp fresh ginger, grated
- 1 garlic clove, minced
- 1 mango, sliced
- 1 bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 1 pear, thinly sliced
- 1/4 cup loosely packed fresh cilantro
- 2 green onions, sliced
Lime Dressing
- juice of 2 limes
- 1 tbsp agave nectar (or 1 tbsp brown sugar)
- 1 tsp Thai fish sauce
Combine the shrimp, soy sauce, sesame oil, ginger, and garlic in a bowl. Marinade the shrimp for 30 minutes in the fridge.
Make the lime dressing by combining lime juice, agave nectar, and fish sauce. Stir well.
Cook the shrimp in a skillet over medium heat until the shrimp is done. Combine the shrimp, mango, bell pepper, cucumber, pear, cilantro, green onions, and lime dressing. Your salad is ready to be served!
This recipe serves 4 people.
