This simple Middle Eastern salad is perfect with pita bread and hummus. Quinoa is full of protein and slow-digesting carbs... which means that you won't be hungry after you eat this salad for quite some time!
- 1 cup quinoa, very well rinsed in cold water
- 2 cups water
- 1/2 tsp salt
- 1/2 cup parsley, chopped
- 1 cucumber, cut into 1/4 pieces
- 1 large tomato, seeded, cut into small pieces
- 1/2 cup green olives
- 4 green onions, chopped
- juice of 1 lemon
- 1/4 cup olive oil
- 3 garlic cloves, minced
- ground black pepper to taste
Bring 2 cups of quinioa to boil. Add salt and rinsed quinoa. Reduce to a simmer and cook for about 15 minutes or until the seeds are translucent. Remove from the heat. Drain and let cool.
Combine the cooled quinoa with parsley, cucumbers, tomatoes, green olives, and green onions. Add the olive oil, minced garlic, and ground pepper. Mix well. Enjoy with pita bread.
