Puttanesca Sauce



This is another great recipe from Roberto Martin. This is a quick and tasty sauce believed to have been invented by prostitutes from Naples. Obviously the ladies didn't have a lot of time to cook in the evening and had to use these simple ingredients to prepare a meal. You can serve the sauce with your favorite pasta, on a piece of bread, or over your favorite grilled veggies.

Ingredients:

  • 1 medium yello onion, chopped
  • 4 garlic cloves, minced
  • 1/2 tsp crushed red pepper flakes
  • 4 large tomatoes, seeded and chopped small
  • 15 fresh basil leaves, minced
  • 1/4 cup flat-leaf parsely, chopped
  • 1 tsp dried oregano
  • 3 tbsp capers, smashed
  • 1/2 cup kalamata olives, chopped
  • juice of a 1/2 lemon
  • 2 tbsp vegetable oil
  • salt and black pepper


Heat the oil in a large frying pan or a stockpot and saute onions until soft. Add garlic and red pepper flakes and simmer for about 2 more minutes. Reduce the heat to medium and add tomatoes, basil, parsley, oregano, capers, and olives. Simmer the sauce for about 25 minutes. Add lemon juice, salt, and pepper.
